Slow Cooker Sweet Potato Turkey Chili

Fall is here and when it starts getting chilly my favorite thing to do is cook comfort food. I love comfort food but hate all the calories that the word "comfort" entails. Therefore I have been looking for recipes that are still cozy, just not totally fattening. I made this chili last night and it definiately satisfied the comfort craving.

INGREDIENTS.
Pam
1 onion, chopped
Ground Turkey
2 tsps of chili powder
1 -2 cups of chicken broth
2 sweet potatoes (yams) peeled and cut
1 can of Mexican style stewed tomatoes
Cilantro (for top) chopped
1 orange cut in half
salt / pepper
brown rice

DIRECTIONS.
1. Brown Turkey until it is no longer pink. Drain. Add to crockpot.
2.Combine chili powder, chicken broth, sweet potatoes, onion, tomatoes.
3. Cook on Low 8 hours.
When ready to serve, add salt / pepper to liking and spoon over brown rice. Squeeze orange over top of dish. Top with cilantro.

Newlywed Pork Tenderloin, Love Lindsay B.

My sister in law shared this recipe.  She is a great cook and so far her Better Than Sex cake is my favorite dessert ever but I don't have her recipe(Hint, Hint)!!! They were just married in June, hence the embarrassing Newlywed title.  Enjoy!
Such good and tender pork, you guys will love it.

...ingredients...
1 (2 pound) pork tenderloin
1 (1 ounce) envelope dry onion soup mix
1 cup water
3/4 cup red wine
3 tablespoons minced garlic
3 tablespoons soy sauce
freshly ground black pepper to taste

...directions...
Place pork tenderloin in a slow cooker with the contents of the soup
packet. Pour water, wine, and soy sauce over the top, turning the pork
to coat. Carefully spread garlic over the pork, leaving as much on top
of the roast during cooking as possible. Sprinkle with pepper, cover,
and cook on low setting for 4 hours. Serve with cooking liquid on the
side as au jus.

SLOW COOKER SWEET N SOUR RIBS

We made these ribs for dinner last night and they were really good. On the side we had brown rice and garbanzo beans (my daughter's favorite). Also, if you like your food spicy, I would serve these with chili sauce like Siricha as well. Enjoy!



...ingredients...

3 to 4 pounds boneless country-style pork ribs

  • 1 can (20 ounces) pineapple tidbits, undrained (we used a bag of frozen pineapple)
  • 2 cans (8 ounces each) tomato sauce
  • 1/2 cup thinly sliced onion
  • 1/2 cup thinly sliced green pepper
  • 1/2 cup packed brown sugar
  • 1/4 cup cider vinegar
  • 1/4 cup tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 garlic clove, minced
  • Salt and pepper to taste

...directions...

  • Place ribs in an ungreased 5-qt. slow cooker. In a large bowl, combine the remaining ingredients; pour over the ribs.
  • Cover and cook on low for 8-10 hours or until meat is tender. Thicken the sauce if desired. Yield: 8 servings.

SLOW COOKER CHICKEN VERDE ENCHILADA CASSEROLE

This dish reminds me of a cozy nights at home with the family. My daughter eats three bowls of this at a time and this recipe is one of my absolute favorite recipes. This Slow Cooker recipe is comfort food at it's best, and has become a staple in our home. Please serve Tapatio (or your favorite hot sauce), black olives, and sour cream on the side. Also, please be advised, the way we prepare this is a little spicy so edit accordingly :) Also, I that I think this dish could use a pinch of salt when you go to serve dinner.

...ingredients...
4-6 poached and shredded chicken breasts (or just buy a Rotisserie chicken and shred)
1 can of condensed cream of chicken soup / 99 % fat free
1 - 2 cans jalapenos (diced) omit if you do not like your food spicy
2 cans of diced green chiles
1 garlic clove diced
1 container of light sour cream (16 oz)
Corn Tortillas (ripped) around 18
2 cans of black olives (sliced)
2 cups Las Palmas Green Enchilada sauce (Medium spicy)
2 cups reduced fat Mexican cheese
2 avocados (sliced)

...directions...
Put chicken in a pot and fill with water, just until covering. Poach chicken 15 minutes. Take out, cool and shred into crock pot. Cover with soup, jalapenos, chiles, garlic, sour cream, tortillas, 1 can of olives, enchilada sauce and cheese.

Cook on LOW for 6-8 hours. Save one can of olives for top of enchiladas, add hot sauce and top with avocado.

SLOW COOKER CARNITAS

As a Mommy, there is nothing better than an easy meal with very few ingredients. Not only does this simplify the number of things we might forget (AKA as Mommy BRAIN) but ends up being cheaper, which is also a huge plus. I made these last night, although I recommend adding sour cream and black olives. Also, we used yellow corn tortillas rather than white because they are my favorite. ENJOY!

...ingredients...
2 pounds boneless country-style pork ribs or pork shoulder (Boston butt), cut into 1 1/2-inch pieces

2 teaspoons salt
2 teaspoons ground black pepper
2 teaspoons dried oregano (preferably Mexican)
1/2 large onion, cut into 4 pieces
1 avocado, halved, pitted, sliced
Fresh cilantro sprigs
Corn tortillas
La Victoria Green Taco Sauce or Tomatillo Salsa
...directions...

Toss pork in bowl of slow cooker with salt, black pepper, and dried oregano to coat. Place onion pieces atop pork. Cover slow cooker and cook pork on low setting until meat is very tender and falling apart, about 6 hours.
Using slotted spoon, transfer pork to cutting board. Discard onion pieces. Using fingers, shred pork; transfer carnitas to platter. Place avocado slices, cilantro sprigs, and sliced red bell peppers, if desired, alongside. Wrap corn tortillas in damp kitchen towel; microwave until warm, about 1 minute. Serve carnitas with warm tortillas and green sauce or tomatillo salsa.
