FRIDAY NIGHT BLUE CHEESE CROSTINI

BLUE CHEESE CROSTINI, fancy for "amazing!" I could not tweak this recipe because after we had these Blue Cheese Crostinis, it would be a sin. Not only is this one full of flavor, these are probably my number one favorite appetizer. Every so often we have cooking contests with my husband's family and he submitted this appetizer that he found on Epicurious. He won for taste, and I must say it was a given because they were heaven in your mouth!

...ingredients...

French or Italian baguette

Blue cheese at room temp

Butter

Sugar

Apricot preserves or Marmalade

Cayenne pepper

Soften the cheese and mix it with a little bit of the butter. The ratio should be about 4 parts cheese to 1 part butter.

Slice the bread 1/2 inch thick.

Toast bread in the broiler.

When the bread is toasted on one side, spread the blue cheese on the untoasted side and sprinkle lightly with sugar. Return to the oven or broiler until the sugar starts to bubble and brown.

Put a small dollop of jam on top and a very light sprinkle of cayenne.

Serve immediately.
