Anyone who knows my father in law, knows what a fantastic cook he is. Every weekend we take the girls over to his house for some of the most amazing home cooked meals. I have not tried this recipe yet, but can assure you that any recipe he feels is worthwhile sharing, is worthwhile cooking. ENJOY!
Nice combination of sweet, tart and hot in each savory bite. This recipe can be used with steak or pork as the main ingredient.

1 Pork Chop (Bone-in or Filet)
2 Tablespoons Cayenne Pepper
2 Tablespoons Chili Powder
Olive Oil as needed
1 Tablespoon Garlic Salt
1 Teaspoon Salt
1 Teaspoon Fresh Ground Black Pepper
1 Teaspoon Cilantro
1 Cup Couscous
1 Cup Water
4-8 Tablespoons Goat Cheese
4-8 Tablespoons Honey

Pour a few dollops of olive oil on to a plate large enough to accommodate the portion of meat you've chosen with room to smear around. Add the dry spice ingredients and mix together using a fork until well married. Add olive oil as needed to keep the texture of the mix a bit wetter than a paste.
Smear the meat in the mixture coating both sides and all edges pressing the meat down occasionally to impress the spices on all surface areas of the meat.
Heat one cup of water to boiling in a sauce pan. When boiling add salt, stir in one cup of Couscous, remove from heat, cover, let stand 10 minutes.
Heat olive oil and 2 Tablespoons of butter in pan, when sizzling place meat in and cook approximately 5 minutes on each side (adjust to meat thickness).
Layer the Couscous on the plate; place the meat on top of the Couscous. Place the goat cheese on the side and cover in the honey. To enjoy, take a piece of the goat cheese, a slice of the meat and a scoop of the Couscous. You can also place the goat cheese on top of the meat.
